  • Harvest: Manual, selection of the bunches at harvest.
  • Vinification: Soft pressing of whole bunches with stalk, fermentation of free-run must only in concrete tanks at controlled temperature. Once fermentation is completed, the wine is racked and aged for 7 months on its fine lees in concrete tanks. During the tirage phase, Pinot Noir vinified as a red wine is added to obtain the rosé color. The wine ages for at least 48 months on the lees. Remuage is performed manually on pupitres, followed by the degorgement phase. Before getting released for sale, the wine ages for an additional six months in the bottle.
  • Color: Pale pink with golden reflections.
  • Perlage: Fine and very persistent, chains of thin bubbles.
  • Aroma: Fresh and refined, with an excellent balance between notes of small red fruits and white flowers.
  • Flavour: Harmonious and precise, with a delicate, fine, and clean personality. Perfectly recognizable for its distinctive personality, derived from the characteristics of the soil and the microclimate in which the grapes ripen.
  • Serving temperature: 10°-12° C. It’s pleasant to appreciate its initial freshness and experience the evolution of its aromas as the wine warms in the glass.
  • Pairings: Fruit appetizers, fish, risottos and shrimp cocktails.

Description

Pinot Noir has been cultivated for more than 150 years in Oltrepò Pavese, the first wine‐growing area in Italy for the production of this noble variety. The sparkling wine tradition is well established in the Versa Valley, where the most vineyards are suited to the production of Pinot Noir grapes for a sparkling wine base, with altitudes reaching up to 550 m a.s.l. BUTÒN in our dialect means sprout. Pinot Noir is the earliest variety among those grown on the farm to sprout.
The vineyard where we harvest the Pinot Noir grapes for the classic method is actually the last one in which, in spring, we observe the vegetative restart of the vines, as it is located on a slope with little exposure to the sun and between cooler and more ventilated than the area. These environmental factors allow a slow ripening of the bunches preserving the acidity and fresh aromas, distinctive characteristics to the tasting of our classic method. The budding of these vines marks, for our family, the beginning of a new vintage, a moment of great emotion and auspicious as we wish it to be the opening of a bottle of BUTÒN.
