- Harvest: Manual, selection of the grapes at harvest.
- Vinification: Destemming, delicate pressing, maceration with the skins in concrete tanks at a controlled temperature for 10-12 days, with daily pumping over, then it is drawn off and alcoholic fermentation ends, generally also malolactic fermentation takes place at this stage. Subsequently, two rackings are carried out and the wine is placed in concrete tanks where it remains to refine for one year. After having been racked, the wine is bottled without filtration.
- Color: Intense ruby red with impenetrable violet notes.
- Aroma: Ample and intriguing, berries, cherries and berries prevail wild strawberries. Light spicy finish of candied fruit.
- Flavour: Fruity and juicy, balanced and harmonious with a good tannic texture. Persistent and with a pleasant aftertaste. The exposure of the vineyard allows the ideal ripening of the tannins.
- Serving temperature: 16 ° -18 ° C. It’s pleasant to appreciate its initial freshness and experience the evolution of its aromas as the wine warms in the glass.
- Pairings: Excellent with cured meats, risotto with pumpkin and braised meats.

In the past, each family named their most beautiful, south‐facing vineyard Costiolo, where they produced the most full‐bodied wine, which was drunk on holidays, the Sunday wine. In this historic vineyard, our family’s smallest and most sunny, we find the classic Oltrepò grape varieties: Croatina, Barbera, and Uva Rara. Croatina, an ancient native variety of northern Italy, very widespread in Oltrepò Pavese, particularly rustic and resistant, planted on steep hills facing south, it characterizes wines with a marked structure and intense color.
A variety that requires long pruning and a high load of buds to maintain a good relationship between leaf surface and number of clusters. It is one of the varieties with the highest content of polyphenols in the peel, by which the intensity of the color it’s determined. Hints of red fruit, cherry and morello cherry characterize the aromas of the wine.
Barbera brings acidity and a finer tannin guaranteeing longevity to this wine. Uva Rara the so called for its loose bunch gives harmony to this typical blend.
