- Vinification: Two-thirds of the grapes are destemmed and pressed, one-third is fermented with the whole bunch. During the alcoholic fermentation, which begins spontaneously with indigenous yeasts, regular punching down of the cap are performed in concrete tanks with controlled temperature. Malolactic fermentation and subsequent aging on the lees for 12 months take place in dedicated 500-liter concrete tanks. The wine is bottled in 0,75 L Burgundy bottles and 1,5 L magnums.
- Color: Ruby red with light garnet hues.
- Aroma: Enveloping and deep, elegant fruity hints of redcurrant and raspberry come together with refined notes of violet and rhubarb.
- Flavour: Velvety and elegant, juicy, medium-bodied and characterized by a good tannic push. Perfectly recognizable for its distinctive personality acquired thanks to the characteristics of the soil and the microclimate in which the grapes ripen.
- Serving Temperature: 14°-16°C. It’s pleasant to appreciate its initial freshness and experience the evolution of the aromas as the wine warms in the glass.
- Pairings: Red meats, even raw, medium-aged cheeses, game.

Description
We are located in the center of the municipality of Montù Beccaria, in the Versa Valley, a vocated area for the production of Pinot Noir. “Al Rivè,” a dialect expression meaning a small hill, is a north‐facing plot where the old Croatina vines were planted crosswise ﴾around the hill﴿. In 2015, we decided to maximize the potential of this vineyard and plant Pinot Noir; here, the ideal conditions are available to produce grapes that can reach the phenolic ripeness that produces a complex wine with character and with the elegance expected from this noble grape variety. The goal is to preserve the fresh and fruity varietal aromas typical of this grape variety by aging it in concrete, avoiding any interference from the wood, and then allowing it to age in the bottle. Our style does not seek forced manipulation or intervention. The balance between structure and tannins in a wine is a natural process that requires patience.
